Polish Spicy Potato Salad

Independence Day in Polish Style! Being from two different cultures is amazing, especially when it comes celebrating federal holidays and important days in either of those cultures. 4th of July is a very special day for all Americans, and I have to say that celebrating that important day always gives me a lot of pleasure.



My first 4th of July I actually celebrated in Poland, but here the mix of family and friends coming together, playing games, making BBQ and enjoying the time spent together is just wonderful, and I am always happy when I can be a part of it. Not mentioning the amazing fireworks that are always the cherry on top.


This 4th of July we all might be spending in much smaller groups than usually. But that is why it is even more important to have great food. This Potato Salad recipe is perfect for almost any occasion but it will be just perfect for any BBQ.


TIME

For 6 people

Time: 1 hour

Prep: 30 min

INGREDIENTS

Salad:

  • 5 potatoes (medium, unpeeled, boiled)

  • 1/2 red onion

  • 5 medium polish pickles (cucumbers in brine)

  • dill

  • parsley

  • chives

  • scallions

  • 1/2 chili

  • salt & pepper

Sauce:

  • 1 tbsp of mayonnaise

  • 1/2 tbsp Greek yogurt (I use whole milk yogurt)

  • 1 tsp of spicy mustard (I use Polish styled)

  • 1 tbsp of sparkling water

  • salt & pepper



STEP BY STEP

Potato salad is great for potluck and it is amazing left for few hours in the fridge. So you can prepared it head of time.
  1. Wash well, and boiled unpeeled potatoes. They should be soft but they can not be over cooked. Depending on their size it should take from 20-30 min.

  2. While their are cooking. Whisk together mayonnaise, yogurt, mustard, sparkling water, pepper and salt. Set aside in the fridge.

  3. Finely chopped red onion, Polish pickles, dill, parsley, chives, scallions, 1/2 chili.

  4. Boiled potatoes drain and set a side in a cold place, for them to completely cool down. Chopped them with the peel on to one inch pieces.

  5. In a big mixing bowl put all the ingredients together, and add the sauce. Add salt and pepper and gently mix everything together.

  6. Put in in the fridge for few hours before serving. Serve it cold. SMACZNEGO!


TIPS


  1. The potatoes HAVE TO BE completely cold, if they will be warm you will end up with mush potatoes instead of the potato salad.

  2. Remember to serve it cold! It tastes so much better.
