Dried Fruit Compote & Pudding

There is A LOT of Christmas tradition in Poland! One of them said that on Christmas Eve there 12 dishes served including appetizers, soup, main meal and desserts! So you can imagine how card it is to taste all of the dishes.



TIME

Ready in 8-9h - that included soaking the fruits: overnight

Cooking: 20 min

+ Cooling Time


INGREDIENTS

The ratio of water to dried fruit is 3:1 cup.


Dried fruits:

All together for this recipe you will need about 8 oz of dried fruit (250g)

  • Apples

  • Pears

  • Plums

  • Apricots

  • Water

Spices:

  • 1 Cinnamon stick

  • 1 Star Anise

  • 1 tbsp of powder cloves

  • 1 tbsp Ginger powder

  • to your taste Agave syrup

  • 1 orange and 1 lemon zest

Dried fruit pudding- Galas:

  • 1/2 cup Heavy whipped cream

  • Blander

  • Dried fruits from the compote




STEP BY STEP


COMPOTE

  1. Wash the dried fruit, put it in a very large pot or bowl, pour water over it and soak them overnight.

  2. Put the water and fruits in a sauce pot and start cooking it on a medium heat. Add the cinnamon stick, star anise and cloves. Let it cook for about 20 min, until the fruits are soft but do not fall apart.

  3. Just before the end of cooking about 5 min till end add the lemon and orange zest, the agave syrup, and ginger powder.

  4. Cool it down and serve it cold.


PUDDING - GALAS

  1. Put the heavy whipped cream into a freezer for 10-30 min. After that time I took it out and whipped it.

  2. Strain the fruits from the compote and put them into a blender.

  3. Blend everything, to the consistency of a pudding, add water if you need.

  4. Serve cold topped with whipped cream.


TIPS

  1. Add sweeter to your taste- you can use sugar, agave syrup or honey.

  2. To cool it down quickly I usually cover it and put it outside, on the balcony or garage door.
