About the Recipe

Tomato soup with grilled cheese is a classic comfort food combination that is loved by many. The rich and creamy tomato soup is the perfect accompaniment to the savory, crispy grilled cheese sandwich.

It is a pretty easy recipe. To make this tomato soup, start by sautéing chopped onions and garlic in a pot with some olive oil. Once the onions are translucent, add in tomatoes, vegetable broth, salt, and pepper. And there it is perfect comfort food.

If you want to keep the recipe vegetarian here is a list of ingredients for vegetarian broth:

2 medium carrots
1 small parsley root
1 parsley greens
1/2 celery root or purple turnip
1 small onion
1 tbsp of butter
6 cups of water - tap or filtered
salt and pepper

The other ingredients
1 tbsp of olive oil
1 big onion
1 peeled and minces garlic clove
2,5 lbs of tomatoes (my favorite are strawberries typ)
hand full of basil
2 big red bell peppers

Grilled cheese ingredients

2 pieces of toast bread per sandwich
2 slices of cheese per sandwich (american cheese or cheddar, Gruyere, emmentaler or edam) - I like to use to different flavors on one sandwich
1/4 tsp of butter

Preparation

Step 1

In a big pot place all the peeled and washed vegetables, add the butter, salt and pepper. Cook it for about 40 min.

Step 2

Peel and finely chopped the onion. Next peel, deseed and chop the tomatoes. Preheat the olive oil on a frying pan. Add the chopped onion and saute it until golden - brown for about 5 min.
After that time add the garlic, cook for another minute, then add the tomatoes. Season it with salt and pepper and cook for 15 min on a medium heat.

Step 3

Preheat the oven 400F, place the bell peppers on a baking sheet. Sprinkle it with olive oil, salt and pepper. Bake for about 7 min. Take it out of the oven, deseed and roughly cut it.

Step 4

Add the cooked tomatoes and bell peppers into the broth. Simmer everything for 15 min., let it cool down for a few minutes. After that, bland everything using the hand blender.
Serve it garnished with basil and with a side of grilled cheese.

Step 5

To make the grilled cheese, butter two slices of bread on one side. Place the slices of cheese in between. Heat a skillet over medium heat and place the sandwich on the skillet. Cook until the cheese is melted and the bread is golden brown, then flip the sandwich over. Cook until the other side is golden brown as well.
