Quick strawberry cake

About the Recipe

So, let’s talk about strawberries. Did you know that Strawberries are one of the most cultivated fruits in the United States? I did not. There are about 600 different varieties and they vary in size, texture and surprisingly in taste.


For the dough

1/2 cup of sugar
4 eggs
1 cup of butter - melted
1 tbsp of vanilla extract
1 1/3 cup of all- purpose flour
1 tsp of salt
2 tsp of baking soda
Lemon zest
3 cups of fresh strawberries
Fresh mint for garnish

Special dishes and kitchen appliances

Stand or hand mixer, with a whisk attachment
Ceramic or baking dish 9x 9 inches
Parchment paper
Wooden spoon or silicone spatula


Step 1

To a bowl of a stand mixer add eggs and sugar. Mix it on high until light, fluffy and it changes color from dark yellow to pastel yellow.
While the eggs are going, place the butter in a small bowl, and melt it in the microwave for 30s. Cool it down.
Preheat the oven to 350F.

Step 2

Add the cooled down butter to the egg mixture. Add it slowly and in a small stream. Next add vanilla extract. Let it mix for 1 min, and turn it off.
In a separate bowl mix all dry ingredients - flour, salt, baking powder- and lemon zest. Mix them all together.

Step 3

Fold in the dry ingredients into the wet, be gentle, use a silicone spatula or wooden spoon.
Cover the baking dish with parchment paper, and pour in the dough. Shake it a bit, to even it out.

Step 4

Spread the strawberries on top.
Bake it for 45 min. After that time check with a pick if it’s ready, if the dough sticks to the toothpick give it 5 more minutes.
