These muffins are made with pumpkin puree, which gives them a moist and tender texture, and chocolate chips, which add a touch of sweetness to every bite. Here's a simple recipe for making pumpkin chocolate muffins at home.
1 1/2 cups all-purpose flour
1/2 cup sugar
1/2 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
2 large eggs
1 cup pumpkin puree
1/2 cup vegetable oil
1 cup semisweet chocolate chips
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the muffin cups with cooking spray.
In a large bowl, whisk together the flour, sugar, brown sugar, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
In a mixer beat the eggs lightly. Add the pumpkin puree and vegetable oil and mix until well combined.
Slowly pour the dry ingredients into the wet ingredients into the and stir slowly until just combined. Fold in the chocolate chips.
Divide the batter evenly among the muffin cups, filling each about 3/4 full.
Bake for 18-20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
