About the Recipe

This simple recipe for red barszcz soup starter for Christmas Eve borscht is cost a fraction in comparison to the one that you buy in the store, but also take much more time. However, I completely understand buy an already made bottle of this superfood liquid.


  • 3 medium beetroots 

  • 4 cups of warm water

  • 3 cloves of garlic 

  • 1 flat tsp of salt 

  • 1 bay leaf

  • 4 peppercorns

  • 3 allspice grains


  1. Wash, peel and thinly slice the beets. 

  2. Prepare a jar about 1l. The jar has to be clean, sterilized with boiling water.

  3. Fill up the jar with ¼ of the beets, add the ⅓ of the spices and 1 peeled clove of garlic. Repeat the sequence by adding another layer of beets and spices until the jar is full. 

  4. In a small saucepan mix together the salt and water and cook it until boiling. Set aside  to cool down.  

  5. Press everything together and pour in warm previously boiled salted water. 

  6. Cover the jar with a clean cloth, and set it aside in a dark, dry warm place for 7 days. 

  7. After 7 days, pour it into sterilized glass bottles and keep in the fridge for up to a month.
