Pork loin with caraway seeds & onion

About the Recipe

This pork loin is my go to dish when I have to multitask between house, work, and taking care of my kiddos. I preheat the oven, cut onion, and sear the meat. Place in a dish and bake in the oven. The prep time takes about 10 minutes. Ideal for a busy day.

It is perfect when served hot with potatoes and green beans. But also very tasty on a slice of bread, and a great recipe for the Easter breakfast table.

Ingredients


4 lbs pork loin
1 big onion (peeled and chopped into quarters)
1 tbsp of olive oil
1/8 tsp of salt
1/4 tsp of pepper
2 garlic cloves
1 tsp of caraway seeds

Appliances:

Oven, frying pan and a 14.5 x 8 x 2.75 inch baking pan or ceramic baking dish

Preparation

Step 1

Start by washing and drying the pork- make sure it is completely dry. Prepare a big frying pan, pour on the olive oil and let it heat up on a big flame. Preheat the oven to 375 F.

Step 2

Sear the meat on both sides. That should take about 4- 5 min. While the meat is searing, peel and chop the onion into quarters.

Step 3

Place the meat in the baking dish, pour the liquid from the frying pan on top of it. Season it with salt and pepper, and caraway seeds.
Chop the garlic and place it on top of the meat, add the onion, spread them around the dish and on top of the meat.

Step 4

Bake it for about 45 min- 1h. After about 20 min, pour 1/3 of a cap of water into the dish. Depending on how you like your meat, you need about 20 minutes per pound.
